This time we speak to David Fry-Thomas, the Head Chef at Madison’s Bar & Restaurant, known for its delectable fine dining dishes and Jazz Age experience.

What is the best thing about working at Milford Waterfront?

I love working at Milford Waterfront as it’s a lovely area full of great places to visit. I was delighted to join Madison’s Bar & Restaurant as the combination of working in a beautiful vintage-style venue that offers a unique dining experience, paired with my own culinary creations in a stunning waterfront setting is a dream come true.

Is there anything people should know about Madison’s Bar & Restaurant that they may not know?

Madison’s is a vintage themed restaurant lovingly created by the owners Ceri and Neale who have brought the Golden Age of Hollywood to Pembrokeshire.

We offer a wide range of cuisine, including Madison’s fine dining dishes alongside our extensive Green Genie vegan menu.

All our produce, ranging from premium organic meats and poultry and fresh seafood to our vegetables are all locally sourced. The dishes are created using my own recipes that I have gathered over the decades in my Head Chef positions worldwide.

Have you got any special skills or talents?

Fine dining is my first love. Over the many years that I have run restaurants fine dining has earnt me my 4-star Rosette awards nationwide! I also pride myself on my extensive range of vegan dishes.

Having personally cooked for so many VIPs in my career, I can adapt any of my dishes to suit everyone’s tastes and dietary requirements so that there is something for everyone.

What is your favourite dish at the business and why?

My favourite dish is my own variation of the French dish ‘Chicken Supreme’ that I created using my own recipes. I created it in 1989 for the G7 summit for the heads of state present on that occasion. This dish evokes great memories for me.

What has been your favourite day at work and why?

Saturdays are always my favourite day as it is always so busy and often includes “special occasion” evening dinners, where the small personal touches we give to our customers to enjoy the full Madison’s experience is a job to behold.
